The same transcript can become a working note, subtitles, an outline, or a document. Here is when each format fits.

Match the format to the next tool
Markdown is the flexible default for notes and writing apps. SRT preserves timing for captions and video editors. OPML carries hierarchy into outlining tools. PDF creates a stable file for sharing or archiving.
If you plan to keep editing, choose a structured text format. If the document is finished and should look the same for everyone, choose PDF.
